公司晚宴,炸子雞幾乎是必定菜式,對廚師來說,烹調應該沒有大問題,基本上都可以做到。
由於現在少了很多新鮮雞(還是已經沒有新鮮雞),香港吃到的雞多是冰鮮雞,而冰鮮雞的質量根本不能比較,所以現在的炸子雞沒有以前有新鮮雞時的好味。
而我亦很喜歡炸子雞,覺得很美味,有雞味,很好味,而平時吃到炸子雞的機會較少,所以都很珍惜每次晚宴的炸子雞。
Fried chicken is a Cantonese style fried chicken commonly found in restaurants in Guangdong, Hong Kong and Macau. This fried chicken is different from ordinary fried chicken. It is not fried in a large pot of boiling water. Instead, the marinated raw chicken is hung up and boiling oil is poured over the raw chicken until the skin is crispy and the meat is smooth and cooked. Since the preparation of fried chicken is time-consuming, it is rarely used as a daily lunch or dinner dish. It is more common in wedding banquets and other occasions, and is given auspicious name such as "lucky fried chicken".
Fried chicken is almost a must-have dish at company dinners. For chefs, cooking it shouldn't be a big problem and it can easily be done and cooked by chefs.
Since there is a lot less fresh chicken now (Is there still no fresh chicken anymore?), most of the chicken eaten in Hong Kong is chilled chicken, and the quality of chilled chicken is simply not comparable, so the fried chicken now does not taste as good as when fresh chicken was available in the past.
I also like fried chicken very much. I think it is very delicious, with a chicken flavor, and is very delicious. However, we rarely have the opportunity to eat fried chicken, so I cherish the fried chicken in every wedding dinner.
