Mantis Shrimp is very large in size. Deep-fried should be the cooking
method to highlight the freshness of mantis shrimp.. Flesh is naturally
sweet and delicious, but not bouncy enough. Mantis Shrimp is getting
more expensive and larger in size.

Roasted
Goose (half bird) is one of the signature items in Hing Kee. This goose
is fresh and is nearly ordered by each table. It is freshly roasted and
delicious. To compare, the best roasted goose in my experience should
be from Yat Lok in Tai Po.

Fried Spirals in Spicy Sauce should be the best method to cook this spiral. Small size as in the above is preferred.

Steamed Garoupa is not large in size. Such smaller size of about one
catty should be the best, in terms of taste and meat texture.

Butterfly
Clam in Soup. This Butterfly Clam is supplied from Malaysia, it is only
available in winter. It is a very nice attempt. This cooking method is
already very good and we can savour the natural freshness of clam.
Maybe, we would try other style next time.

Hing Kee is reported to be the best eatery in Sam Shing Estate of
Castle Peak Beach. It is very crowded at dinnertime. Reservation is a
must.

It
is the first time to dine in Sam Shing Estate. It is said that the best
eatery is Hing Kee. We therefore do not have other thinking and decided
to dine in Hing Kee. It is in fact a modern Dai Pai Dong, with improved
decoration and dining environment.
We
buy seafood from the wet seafood market nearby. It is really difficult
to decide which to select in an array of seafood. Together with roasted
goose and vegetable, it would be a very plentiful meal. We are pleased
that dishes cooked in Hing Kee are of
quality, it is even higher than quite a lot of other Chinese
restaurants. We do not have any disappointment. We do not sense that
food quality is poor because Hing Kee is located in a dai pai dong. We
appreciate the roasted goose, though it is not the best available in our experience in Hong Kong . We would
like to dine again in Hing Kee, if time allows. It should be a paradise
for seafood lovers.
