'Thick
Soup of Fish Brain' is a very nice and special item, this is the
portion for one diner. Fish soup is concentrated and does not have any
trace of msg. In the soup, there are diced tofu, diced thousand year
preserved duck egg, Chinese celery and dried orange peel. There is no trace of fishiness too. It is nearly flawless.
No
meat tenderizer has been added. It is only average though the sauce is
very flavourful but the meat itself is not of good quality enough. The
buyer must know what they have ordered and the result is anticipated in
their mind. This Cha Siu (BBQ Pork) does not deserve to be one of the signature items in Fu Sing now. It is a disappointing item.
Cabbage in Broth is also a quality dish.
Preserved Meats w/ Rice in Claypot is most suitable to be ordered in
autumn and winter. Preserved duck and pork sausage are particularly
palatable.

Fu Sing is one of the quality Chinese restaurants in Wanchai. It is
crowded in lunchtime everyday. At night, maybe pricing is a bit
higher, it is not so crowded and tables are well spaced.
All
dishes are generally good. While the fish head thick soup is
outstanding, cha siu is only average (mainly because of poorer pork
quality, this is a fundamental error). In the past, its cha siu is
outstanding. But now it is a disappointing dish. Anyhow, Fu Sing is still a nice restaurant to visit again.
