Noodle is al dente and the portion is not small. It is a nice try of knife-cut noodle in Hong Kong. Yes, we seldom try noodle in soup.
Chicken in Spicy Oil (口水雞)
The chicken is of course chilled. There is no need to expect too much on whether there is chicken flavor or meat texture is bouncy. But the spicy oil / sauce is the soul of this dish. If you like spicy sauce, you would ensure each side of the chicken piece must have the spicy oil / sauce before it is putting into the mouth. For those who cannot eat spicy stuff, this is too spicy. For those who like spicy stuff, this should be spicier.
Green Cucumber in Fresh Garlic & Black Vinegar Sauce (手拍青瓜) is delicious and priced reasonably. It is very healthy too.
Pan-fried Xiao Long Bao (Pan-fired Steamd Pork Dumplings, 生煎小籠包)
There are totally eight pieces. Xiao Long Bao is pan-fried for a while and egg sauce is added at the end. Normal steamed Xiao Long Bao is also available. Stuffed minced pork texture is a bit firm, this should be improved. Apart from this, it is a nice new method of eating Xiao Long Bao.

Under normal circumstances, we do not have interest in soup noodle, mainly because it is too easy for them to prepare noodle in soup. What they need to do is to add msg, this is very disgusting. Of course, the main reason is to increase margin and reduce cost. But the reason for us to try here is the knife-cut noodle. BTW, there should be several similar eateries in Hong Kong.
The one in Tsuen Wan is very crowded and packed. Normally each diner can spend at most thirty to forty five minutes for a meal here. Since after placing order, all dishes will be served in ten minutes and patrons will not be comfortable to stay and chat in a packed environment.
Regarding food, all should be of above average quality. They are really not bad. If the price is also considered, I do not think there should be any complaint. To try once in Shanxi Knife-cut Noodle is already sufficient for us. Frankly speaking, its foods are authentic and spicy enough, noodle is al dente in texture. It is a nice Chinese noodle meal at very reasonable price in Tsuen Wan.
