Do not eat uncooked #bambooshoots
Uncooked bamboo shoots contain cyanogenic glycosides. Consuming sufficient quantities of uncooked cyanogenic glycoside-containing plants such as bamboo shoots can cause poisoning.
Plants containing cyanogenic glycosides should be cut into small pieces, soaked in water and cooked thoroughly in boiling water before being safe for consumption.
That is, bamboo shoots should be cooked before they can be eaten.
What is #cyanogenic glycosides?
Cyanogenic glycosides are a group of chemical compounds that occur naturally in more than 2,000 species of plants, and at least 25 known cyanogenic glycosides are present in edible parts of plants. Cyanogenic glycosides themselves can be said to be non-toxic. However, during the chewing process of plant tissues or the presence of intestinal flora, the hydrolysis of β-glucosidase will be triggered, which will decompose cyanogenic glycosides and release hydrocyanic acid (氢氰酸), which is toxic to animals and humans. The potential toxicity of cyanogenic plants mainly depends on their ability to produce hydrocyanic acid.
What are the symptoms of cyanide poisoning?
Clinical signs of acute cyanide poisoning in humans include rapid breathing, drop in blood pressure, rapid pulse, dizziness, headache, stomach pain, vomiting, diarrhea, confusion, tremors, and convulsions.
Other edible plants containing cyanogenic glycosides include #cassava, seeds in some drupes (such as northern apricots) and #limabeans, etc.
