在飲宴的清蒸大石斑，估有三斤重。有時沒有大石斑，會變成蒸雙班。
現在的石斑大部份都是養魚，肉質鬆散，但加了酒樓自製的蒸魚豉油和蔥絲，都是不錯。
不能要求太高，因為食材已經改變，應該永遠不能回頭，不可以再食到以前高質的海魚了。

在酒樓飲宴時的蒸石斑，其實，剛剛夠每人一些。
但有些人，貪，狂風掃落葉的，把很多的扒到自己的碗了，不理他人死活。
哈。
現在的石斑當然是飼養的，肉都不是彈牙。

清蒸石斑，但很多魚販或酒樓會寫成清蒸海石斑，多了一個海字，表示是好魚。
石斑不是一定在海養嗎？無論你是真海魚或是養魚，都是在海生長的。
寫海石斑的人真的愚昧無知得。。。

Steamed grouper, but many fishmongers or restaurants will write it as steamed sea grouper. The addition of the word "sea" means it is a good fish, it is a fish from the sea. Doesn't grouper have to be raised in the sea? Whether you are a real marine fish or a fish farmer, they all grow in the sea.
The person who wrote "sea" grouper is really ignorant to an extent of . . .

這條石斑，蒸得普普通通，沒有驚喜。

通常在飲宴才有的清蒸大石斑，雖然是養魚，不過每次心裡都很期待，我沒有跟旁邊的人說。哈。
Steamed large grouper is usually only available at banquets. Although it is fish farming, I look forward to it every time and I don't tell the people next to me.
