Shrimp dumplings, also known as Hong Kong-style steamed dumplings and Cantonese-style steamed dumplings in areas outside Guangdong Province, are steamed dumplings wrapped in transparent powder skin.
Shrimp dumplings are mostly half-moon-shaped with about thirteen pleats. The traditional Cantonese-style shrimp dumplings are filled with river shrimp, fatty pork, and chives, and must be thirteen and half-folded.
The Hong Kong-style shrimp dumplings are simplified and changed to sea shrimp, bamboo shoots, and half-fat lean pork, and the number of pleats varies from nine to thirteen.
High-quality and delicious shrimp dumplings must have thin and soft skin, the dumpling skin must be elastic and translucent; the shrimp meat should be refreshing and elastic, and there is a very small amount of sauce in the dumplings.

Usually, there are four pieces per serving, but some restaurants have three only. There are even some restaurants euphemistically called it the King of Shrimp Dumplings, but they are only sold independently, which can be a little more expensive.
I remembered eating shrimp dumplings for lunch at a Chinese restaurant in Admiralty before. I saw a small dead cockroach on the bottom of the dumplings. It should be that the shrimp dumplings were placed in the cage last night, or the steamer was crawled into by cockroaches and died and was attached to the cage without being noticed. The restaurant is still open in 2022, with the same name as the building.
