Why do some egg tarts sink so badly?

If the custard of the egg tart is plump, it will look good and be happy to be eaten.
Why do we sometimes see some egg tarts sunk very badly? I don't want to buy it, I don't want to eat it.
Ask the person in charge why does this happen? She said that when we laid the custard, it was almost full, and it all sank like this in the end.
I will tell you why the custard of the egg tart sinks so badly because too much water is added, that is, the custard is low in density. Why does this happen?  Money, they want to reduce costs and earn more.
However, if they cannot sell all the tarts immediately after the tarts come out of the oven, the egg custard will sag very seriously, and the real reason will be exposed.
Of course, many people will believe the words of the person in charge. They have already laid a lot of eggs, but for unknown reasons the custard has sagged into such a serious situation. This is definitely an ignorant lie.

It's just a quibble, how could they not know the reason?
Some tarts' custards would not sink so much.
