炸鯪魚球,是廣東的一款菜式。在維基百科,是這樣描述的。
1)鯪魚球是鯪魚肉加入髮菜絲、陳皮茸和醃料攪至起膠做成的肉圓,發明於順德。
2)鯪魚球沾上生粉放油內炸,炸成後加上蜆介醬吃。

好味的炸鯪魚球,可遇不可求。
不是大酒樓,有名食肆就一定做得好。
不是有所有材料就一定做得好食。有好和足夠的材料,師傅的技巧便是最重要。
很多無良的,偷工減料,加很多生粉,當然不好食。
不新鮮的魚肉,無論怎樣搞,都不好食。
有些剛炸好,很大粒,但一會兒,便縮小了一半,便是加了很多生粉,裝假狗。
佐敦吳松街的和味粥店便做得好。$8一粒,最少四粒。
滿口鯪魚香,被炸過的部份更加香口,非常好味。
炸鯪魚球的好朋友是蜆介,有錦上添花之效。

The delicious fried dace balls are not easy to cook.

Many unscrupulous people, for saving money, add a lot of cornstarch. Quality deep-fried dace ball cannot be made.
With stale fish, no matter how skillful the chef is, the fishball will not taste good.
Some fish balls were just fried and were very big in size, but after a while, they shrank by half. This is the result of adding a lot of cornstarch.
