if you want to fry the pork with juicy condition, just fry it two minutes, turn over, one minute more, take away. The latent heat can make the pork more cooked, after ten minutes around, fry again until almost yellow-brown, take away, it would spontaneously be golden brown later, that is ok.
But in fast food restaurant, they like to steam first and fry, thus not so crispy but faster.As once steamed, meat juice would run out, not so delicious, more dry, but guarantee 100% cooked.
